Adobo Chicken


  • 10 lb chicken breast
  • 10 lb chicken thigh meat
  • 6 cups roasted salsa
  • 3 cans blended chipotle peppers in adobo sauce
  • 1 cup taco/fajita seasoning
  • 1 cup tomato paste


Blend roasted salsa, adobo sauce, seasoning, and tomato sauce in a large pot with an immersion blender. Bring sauce to a boil then turn on lowest simmer possible. Add chicken and cover pot. Let cook slowly until chicken is 155 degrees. Then remove chicken from sauce (keep liquid). Let chicken cool on a pan then dice.
