Chicken Tinga Sauce

Ingredients

  • 4 TBS olive oil

  • 4 cups rough chopped sweet onion

  • 8 garlic cloves, minced

  • 4 chipotle peppers in adobo sauce, chopped

  • 1 TBS dried oregano

  • 2 tsp ground cumin

  • 3 cups canned crushed fire roasted tomatoes

  • 1 cup chicken stock

  • 2 tsp kosher salt

Directions

  1. Heat large skillet over medium heat. When warm, add oil and onion. Saute for 4 minutes or until tender, stirring occasionally.

  2. Add in garlic and cook for 30 seconds more.

  3. Stir in chipotles, oregano, cumin, and toast for 1 minute.

  4. Add tomatoes, stock, and salt. Bring to simmer, and cool for 7 minutes.

  5. Place the tomato mixture in a blender and puree until smooth.
