Pork Carnitas

Ingredients

  • 4 lbs skinless, boneless pork butt or shoulder
  • 3-4 tsp salt
  • 1 tsp pepper
  • 1 TB dried oregano
  • 1 TB ground cumin
  • 1 large brown or white onion, cut into wedges
  • 8 smashed garlic cloves
  • 2 limes, juiced
  • 2 cups orange juice
  • 2 cups coke
  • 2 bay leaves

Directions

  1. Rinse and pat dry pork with a paper towel.
  2. Add all ingredients in the bowl of a 6 quart slow cooker.
  3. Cover and cook on low for 8-10 hours (or high for 5-6 hours) until meat falls apart.
  4. Remove and shred with forks, keep liquid.
