- 4 lbs skinless, boneless pork butt or shoulder
- 3-4 tsp salt
- 1 tsp pepper
- 1 TB dried oregano
- 1 TB ground cumin
- 1 large brown or white onion, cut into wedges
- 8 smashed garlic cloves
- 2 limes, juiced
- 2 cups orange juice
- 2 cups coke
- 2 bay leaves
- Rinse and pat dry pork with a paper towel.
- Add all ingredients in the bowl of a 6 quart slow cooker.
- Cover and cook on low for 8-10 hours (or high for 5-6 hours) until meat falls apart.
- Remove and shred with forks, keep liquid.
